Are you getting pumped for Thanksgiving? I am! One of my favorite things about Thanksgiving is getting to eat the classics from year to year, while also getting to try new items! As my family is getting older, my cousins and I have started to make our own dishes to bring to Thanksgiving. It makes me feel really grown up! Baking and fixing my own goods for our family feast! Hello All! I hope you are enjoying your summer and all the festivities that come with it! One of this things I love about summer is the delicious abundance of fresh fruits. Sweet treats are my specialty anyway, and having fresh ingredients can change the way a special treat tastes. Here are some of my favorites that I am looking forward to this summer! S'mores Pudding Pie Can you say yummy??? S'mores are an essential part of summer. It brings me back to campfires and summer camp. Late night fishing expeditions and bat coming out at dusk to get their first sips of water for the evening. When I smell toasted marshmallows, I can almost close my eyes and hear the peepers start singing. Incorporate a little s'more fun into your summer! Cast-Iron Blueberry Cobbler Another quintessential part of the summer are blueberries. We have blueberry bushes in my front yard at home, and for years we would pick and sell blueberries. We still do! One summer home from college, I was so broke that I had to pick blueberries and blackberries everyday all summer long. I would wake up before the sun came up in order to get out picking before the heat and the bees. I spent that summer listening to the sounds of morning breaking over the farmyard. No Bake Strawberry Cheesecake STRAWBERRIES!!! Growing up, my dad and I would go strawberry picking at one of the strawberry farms near the base of Pilot Mountain. We may have only gone once or twice, but I have since then been in love with the idea of strawberry picking. Josh promised to take me next year, and I plan on taking my children to experience our summertime tradition. Berry Pie on a Stick Pies, and cobblers. I think I could live on pie alone. The only problem about pie is that it is large and hard to transport. Problem solved: Put your pie on a stick! Yes, that is indeed what I said! Put a stick in it. This makes something so delicious, even better because now, its a party! Lemon Icebox Bars The best thing about summertime is the sun and heat, but it can also be the worst. Here in North Carolina, we deal with weather fluctuations everyday, sometimes multiple times a day! The best way to beat the heat is to stay hydrated, but water just doesn't taste as good as homemade lemonade. These little bars taste like that good, fresh lemonade with just the right amount of cool to help you stay cool in the heat. Angel Food Cake with Macerated Berries and Mascarpone Nothing is better in the summertime than angel food cake and sweetened berries with berry syrup. Angel food cake is my all-time favorite cake...ever. Nuff said! The berries are oh-so sweet and the cake is light and fluffy. Yogurt Ice Pops with Berries Yep, I did it again. Berries on a stick. Only now it is with yogurt! Once again, a great way to cool down in the heat of the day, and these are perfect favorites for all ages. Great freezer finds and an easy snack to feed Josh when he gets hummy. Phoenix enjoys the yogurt part of the pop too, so it is something my family can enjoy! Ricotta Orange Pound Cake with Strawberries To me, strawberries sing summertime. So what is better than a delicious ricotta orange pound cake with fresh strawberries scattered all over the slice? Answer: NOTHING! So, fix yourself a bowl and enjoy! Want to add more to love? Put it in a bowl with vanilla ice cream and add a little strawberry syrup. Yummy! Peach Cobbler I love cobbler! I don't know if you noticed that earlier, peach cobbler is one of my favorites. My mom is allergic to peaches, so this is a new kind of love. Very recently developed. This recipe involve biscuits for the crust and local honey for the sweetener. Using locally grown fruits and honeys in a great way to help boost the economy in your hometown, and experience the best of the best. Locally grown produce is often in better condition, better for you and your community, and will ultimately last longer than items that have been shipped across the country. Support your local farmers today! Frozen Peanut Butter Pie Pops Life on a stick is the good life! As we have covered before, stick = easy to transport; frozen = helps you stay cool and our new lesson; chocolate = can NEVER go wrong (unless you don't like chocolate in which case, how do you survive???)!! Want a healthier option? Instead of making a cake, use a banana and peanut butter. It will have a sweet taste, without filling your waist! You see what I did there? What treats are you making this summer?
